At our core, we’re about creating moments—kids after ballgames, families on summer evenings, and communities coming together. What sets us apart is that we’re not trying to feel corporate or generic. Our brand has personality, color, and energy, and our menu gives us flexibility to operate successfully across seasons, which is important in the South.
FC: Flying Dolly’s recently announced new franchise locations in Mississippi. What led to that decision?
SM: Expansion into Mississippi was very intentional. We don’t believe in growing just to grow. We look for markets where the Flying Dolly’s brand feels natural culturally and where the climate and community support our product mix. Mississippi checked those boxes. Just as important, we found franchise partners who are deeply rooted in their communities and truly understand the local market. That alignment matters more to us than speed.
FC: How important is franchisee selection to Flying Dolly’s long-term success?
SM: It’s absolutely critical. We don’t view franchisees as customers—we view them as partners. Every Flying Dolly’s location reflects the brand as a whole, so we’re selective about who we work with. We prefer owner-operators or families who are hands-on and invested in their stores. One strong operator can elevate the brand in a market, while one weak operator can do real damage, so we take that responsibility seriously.

SM: Hospitality experience is a plus, but it’s not required. What we really look for is work ethic, leadership, and personality. We want people who enjoy engaging with customers, who understand local marketing, and who are willing to be present in the business. Some of our best operators come from non-traditional backgrounds, but they share a passion for the brand and a strong connection to their community.
FC: How does Flying Dolly’s support franchisees during training and after opening?
SM: Support is ongoing and very hands-on. We start with comprehensive training that covers operations, brand standards, and customer experience. Once a store is open, franchisees have continued access to our team for operational guidance, marketing support, and problem-solving. As we grow, we’re building scalable systems, but we’re committed to maintaining accessibility and real relationships with our franchise partners.
FC: Consistency is often a challenge for emerging franchise brands. How are you addressing that as you grow?

We invest in standardized processes, clear brand guidelines, and controlled sourcing where it matters most. At the same time, we allow room for local personality. The experience should feel unmistakably Flying Dolly’s no matter where you are, but it shouldn’t feel cookie-cutter. That balance helps protect the brand while keeping it authentic.
FC: Flying Dolly’s has talked about a goal of reaching 10 company-owned locations. Why is that milestone important?
SM: Company-owned locations are essential to our strategy. They allow us to test and refine everything—menu items, staffing models, marketing tactics, and operational systems—before rolling changes out to franchisees. Reaching 10 company-owned units gives us a strong operational foundation and ensures that when we introduce something system-wide, it’s been proven in real-world conditions.
FC: How does that company-owned strategy benefit franchisees specifically?
SM: It reduces risk. Franchisees benefit from lessons learned at the corporate level and from systems that have already been tested. It also strengthens our purchasing power, training programs, and support structure. A franchisor that actively operates stores understands the realities franchisees face day to day, and that perspective makes a big difference.
FC: What role does marketing play in Flying Dolly’s growth strategy?
SM: Marketing is huge for us, but it’s not just about advertising. Flying Dolly’s thrives on community presence—school events, fundraisers, festivals, and partnerships with local organizations. Our brand is naturally visual and social-media friendly, which helps drive organic engagement. We provide franchisees with brand-level assets and guidance, while encouraging them to activate locally and build real relationships in their markets.
FC: From a financial standpoint, what makes Flying Dolly’s an attractive franchise opportunity?
SM: We’re a relatively simple operation compared to many food concepts, which helps control costs. Our menu allows for strong margins, and our labor model is efficient. While seasonality is often a concern in this space, our diversified product mix helps smooth that out. We’re also mindful of footprint size and build-out costs, which lowers the barrier to entry for franchisees.
FC: What advice would you give to someone considering franchising for the first time?
SM: Be realistic and do your homework. Franchising isn’t passive income—it requires involvement, especially in the early stages. Talk to existing franchisees, understand the daily operations, and choose a brand that aligns with your values and personality. If you don’t believe in the concept or enjoy the day-to-day experience, it will show.
FC: Looking ahead, what does the future hold for Flying Dolly’s?
SM: We’re focused on smart, sustainable growth. Our near-term focus is expanding thoughtfully across Louisiana, Mississippi, and Alabama, with an eye toward the Florida Panhandle when the timing is right. More than anything, we want to build a brand that lasts—one that franchisees are proud to own and communities genuinely embrace.
FC: Finally, what excites you most about leading Flying Dolly’s at this stage?
SM: Seeing people connect with something we’ve built is incredibly rewarding. Every new location represents opportunity—for the franchisee, for employees, and for the community. Being able to guide that growth responsibly, while staying true to who we are as a brand, is what excites me most.
