  • 1 Restaurant actually attained or surpassed the stated average gross sales;
  • 2 Restaurants had a percentage for food/paper expenses which met or was lower than the stated average percentage of gross sales;
  • and 3 Restaurants had a percentage for labor expenses which met or was lower than the stated average percentage of gross sales.
